Marine Science and Horticulture Students Make Tilapia Tacos with Professional Chefs
Mercer Island, WA, June 4, 2024 – The Mercer Island High School Marine Science and Horticulture classes were visited by professional chefs this afternoon who gave demonstrations of proper fish cleaning and prep techniques and also made fish and vegan tacos for students.
Professional chefs Cody Rogers and David Cobb from Bon Appetit Management Company gave two presentations to students between noon and 3pm.
Some of the fish for the tacos was provided by tilapia freshly harvested from the school’s aquaponic system Tuesday morning.
“As an agriculture teacher, my goal is to help teach students how they can leave the world a better place than it was given to them,” said Marine Science and Horticulture teacher Elysse Forester.
“Bringing in the Aquaponic System this year has allowed us to practice the sustainability we learn about while getting real world job experience in aquaculture and food production. Culminating this year long process with tacos made from our Tilapia was an exciting full circle moment for students. It was exciting to learn from chefs who share our passion for sustainability,” continued Forester.
Forester indicated the chefs were donating their time and resources to support our sustainability and education efforts.
